St. Patrick’s Day Ice Cream

Happy St. Patrick’s Day! We got a Kitchenaid ice cream attachment during quarantine, and I’ve been saving tons of recipes on Pinterest. This Lucky Charms Cereal Milk recipe from Like Mother Like Daughter was on the list so when I saw the St. Patrick’s Day Lucky Charms at Target and couldn’t resist.

The first step was separating the marshmallows from the cereal. Luckily, Pete did this part.

Next up, I made the ice cream base mixture, and we soaked the cereal. The recipe says two hours to overnight. We opted for overnight, and I’m glad we did because you can definitely get the taste of cereal milk but it’s not overwhelming. I’m not sure it would have come through enough if it was only soaked for a few hours.

After straining the milk, it was into the mixer! I added a few drops of green food coloring to add to the festive fun.

After that, I poured right into the container, layering the base of the ice cream and the marshmallows and mixing as I went. Here’s what the final product looked like:

Between soaking the cereal overnight, the 6 hour freeze time and the fact that the marshmallows were much softer the second day, this is a dessert you’ll need to plan ahead for. But, we’ve been enjoying it all week and I can’t wait to make it again!
